This terrific, slightly more mature cab merlot from the Blue Pyrenees winery in western Victoria has really lovely, bold aromas of blackcurrant and eucalypt and a delicious generosity in the mouth. But it's sealed with a plastic cork, so we're not only surprised that it still tastes so good (plastic corks tend to make the wine develop much faster), we're also hesitant to recommend it too highly, as it may not hold up for much longer.

Blue Pyrenees Estate, in Victoria's Pyrenees district, has had a succession of second labels over the last few years. The latest is Ghost Gum, and this wine fits right in with the Estate's rather European winemaking style (it's owned by a French drinks multinational). It's a quite dense, woody, chewy, tannic and substantial red wine, that needs a big, hearty, meat-based dish to help it soften up. For lovers of big, sturdy reds.
