Cracka Review

I didn’t set out to make French Champagne. I set out to make an Australian Vintage sparkling. Fruit was Barossa Chardonnay, with a touch of Pinot Noir from the Adelaide Hills from my NV stock. Juice was macro-oxidised before being fermented – 30% was sent into old oak for two months and the balance was left on lees. Final blend was done and sent for Charmat ferment. Finished with 8 g/L sugar and a tipple of 30 year old brandy, this is a style for Australian consumers and great Australian seafood. Crisp and refreshing, every sip will reveal more and more layers.
