The Hanging Rock style is built around winemaker John Ellis's favourite champagne, Bollinger. This means he's worked layers of complexity into every corner of this pinot-driven wine. Starts out with smoky-spicy flavours and then builds into more biscuity, bread dough territory, fulsome texture and no-holds-barred power. It's a well-rehearsed offering; this edition is based on the 2000 and 2001 vintages with smaller amounts of older reserves.
