The Happs have been making quality wines in the Margaret River regions since the 70s and this wine appeals to those who are susceptible to sulphur dioxide, the principle preservative used in the production of table wine. Many people react adversely and so this wine is the perfect solution. A buttery nose, as well as varietal aromas of stone fruit and lime with vivid yeast and bread aromas before a rich palate of cashew and fig. It’s creamy and persistent and just the thing for chicken in a preservative free sauce of course.

Buttery cashew characters combine with ripe stone fruit and a creamy palate to yield a wine of considerable individuality. Thankfully the wine shows no obvious oxidative characters, testament to the level of care in the winery. The palate is full flavoured and long with a finish that exhibits brioche and lemon butter characters.

Bright green-yellow, showing no sign of browning; the bouquet is quite rich and solid, with yellow peach, and the palate, likewise, has stood the test of time remarkably well, showing no oxidation or mousiness. A 50/50 blend of Chardonnay and Semillon which one would normally seek to drink in the year of vintage.
