The Blanc de Blancs of the Champagne houses tend to be the most expensive in the portfolio. They can cost hundreds of dollars, so finding one at this price gets the double thumbs up for value! Made from 100% chardonnay, it shows ripe stone fruits, jasmine, buttered croissants and nuttiness on the nose, whilst the palate is quite elegant and stone fruity, with fine bubbles, licks of honey and mint, and a bright citrusy finish. A great party starter with some butter poached prawn nibblies. 

Winemaker's Notes

Appearance: Sparkling, crystalline pale gold with slight green highlights. Abundant effervescence, fine and regular, with fine, delicate bubbles.

Nose: Pure, concentrated and expressive, with floral (honeysuckle, orange flower, linden), fruity (lemon, dried apricot, almond) and pastry aromas, followed by spicy notes.

Palate: The attack is dynamic, full and powerful, with aromas of lightly toasted brioche, quince jelly and acacia honey. The clean, delicious finish develops on a light menthol note and shows excellent length.

Food: Court-bouillon of Brittany blue lobster with lemon balm.

The blanc de blancs are where this house really excels, capturing finesse and precision, the chardonnay-only cuvee moderates richness, etching a finer line across the palate. Ripe yellow stone fruits, a little toast, all balancing neatly through the finish.
