Higher Plane Cabernet Sauvignon

Winemaker's Notes

High density planting with resulting lower yield per vine enables our Cabernet vines to ripen evenly and avoid problems with lack of phenolic ripeness, i.e. the flavours are ready by the time the sugars are high.

The wine is made to be medium bodied in weight, fine and with impressive colour. Aromas and flavours will typically be dense with cassis and an edge of red fruits. We aim for oak tannins to be dusty & fine and grape tannins ripe and balanced Acidity is balanced but high enough to sustain the wine through 10-15 years and we expect ink, truffle, and cigar-box notes to develop with age.

The wine shows a distinctive cool-climate elegance when set against its cousins from more northern parts of Margaret River, whilst still recognisable as coming from this outstanding Cabernet region.

Expert Reviews

Ray Jordan (2009 Vintage) says
Takes the superb 2008 to another level with its greater concentration and power as a result of this excellent vintage. Intense and striking black currant aromas with lots of chocolaty dark plum nuances. On the super fine and elegant palate the ripe fruit concentration is reined in with control and polish. Love the leafy high tones that set this southern region apart.

James Halliday (2009 Vintage) says
Deep garnet; lifted and fragrant pure black fruit bouquet, showing cassis and roasted meat complexity; the palate is unctuous and laden with sweet fruits, soft on entry and firming up on the long finish. One of five wines to win gold medals in the Cabernet Sauvignon Trophy class, National Wine Show '11.
