Given the works: whole bunch-pressed, wild-fermented in French oak, lees stirred, and nine months in oak. The wine certainly has considerable texture and structure, and will almost certainly handsomely repay the six or so years winemaker Kate Morgan suggests. Still lean and tart, an appropriate start for cellaring.

Dry-grown 30-year-old vines, hand-picked, whole bunch-pressed, wild-fermented in French barrels, lees stirred, 9 months' maturation - take me to the Loire Valley. All the above plus early picking puts a lean and racy face on chenin blanc that will undoubtedly grow in bottle over this decade. A great success.
