The Tic Tok range from the Oatley family honours a family ancestor who was a famed clock maker and his long case clocks were revered and now they are rare, trading on the antique market for $500,000. This wine is not so rare but it’s still made with precision and discipline taking Pinot Gris grapes from the Adelaide Hills. This is a nicely textured wine with bright fruit flavours of pear and spice with clean acids and great length. Perfect with some grilled fish or some antipasto dishes.

Winemaker's Notes

This delicious, textured, flavoursome pinot gris was made from grapes grown in the cool Adelaide Hills district of South Australia and harvested in the cool of the night.

The greater portion was fermented in stainless steel to capture the bright fruit flavours whilst a small portion was left on partial solids and fermented in older oak barrels for additional texture and mouthfeel. The latter component was fermented with its native yeast.

The result is a lovely example of the ‘gris’ style, bright and textured with musk and pear notes over a full-flavoured fruit-driven palate.
