It's hard to believe but McWilliams seem to be making better stickies with each vintage. This is given luxury treatment during the production process. A portion of the juice is slow fermented at cold temperatures in tank over thirty days while the balance is fermented over three months in new and old oak barrels. The wine is then ged in old oak for twelve months before bottling. While Max was impressed, he ound the JJ McWilliam 'a little overpoweringly weet'. It was Peter's standout sticky: 'wonderfully perfumed, delicate, fresh apricot and marmalade characters'. Here is a wine that has lightness of body, lively acidity, intensity of flavour and a crisp finish that cleanses the palate.
