LaCache Rose Methode Champenoise
This cheeky little rose is made from 90% pinot noir and 10% chardonnay, so it's pretty full-bodied for a sparkling. There's some ripe, rich fruit on the nose and palate along with some attractive creaminess after 3-years on it's yeast lees, a nice touch of toast and a fine mousse cleaning up the palate. Lovely jubbly.
This Rose was produced from 60 % Margaret River Pinot Noir and 30% Manjimup Pinot Noir and 10 % Manjimup Chardonnay. Use of riper grapes, spontaneous yeast and malolactic fermentations, barrel aging and no filtration results in a rich, fully developed base wine. After 3 years of bottle aging the resulting wine offers a fine integration of incisive fruit flavours with characteristic "toasty" yeast, a full creamy palate and a lively well entrained mousse.
