The grapes from three Marlborough sites were hand-picked and whole-bunch pressed before being fermented. The blend contains pinot noir (70 per cent) and chardonnay (30 per cent) with five to 15 per cent reserve wine, comprising base wine held back from previous vintages. The wine is then aged for at least 36 months before being disgorged and given a sugar dosage of seven grams per litre. The pinot noir component dominates, providing a chocolate-box character and plenty of weight. An elegant and complex sparkler.
