Now, this is a sparkling red right out of the box! it's a multi-vintage shiraz, cab sav and merlot blend that has old Australian fortifieds added to it. The outcome is a sumptuous, cuddly style of sparkling that shows dense black fruits and mocha on the nose, with just a whiff of savouriness. The palate is rich and fruit sweet with poised acidity, a slightly creamy mouthfeel, and a dry, bright finish. It's certainly a fuller-bodied style of sparkling red that would make a great cheese wine.

An Australian icon with dark, brooding opulence and layered complexity nurtured over many years. Creamy and fresh with a super fine bead, this is the modern history of Australian red wine in a bottle.

The JOSEPH Sparkling Red base wine contains a unique blend of museum vintages from the last forty years combined with a hogshead of the ultra premium JOSEPH Moda Cabernet Merlot from every year since 1991 and Primo Estate Shiraz dating back to 1989.

A tirage is only completed every 18-24 months, ensuring the base wine retains it’s unique character derived from the aged wines in the blend.

After traditional fermentation in the bottle, the 2010 JOSEPH Sparkling Red disgorgement rested on yeast lees for 20 months before hand disgorgement. It was liqueured carefully with a blend of aged Australian fortified wines to ensure a savoury style with perfect balance.

The JOSEPH Sparkling Red has to be the ultimate Christmas indulgence or addition to a dinner party.

Check the recipe and marvel: Shiraz from every vintage since the eighties (and some from the early sixties and seventies), a hogshead of Moda Cabernet Merlot every year, liqueured with old Australian fortifieds. The result is serious complexity and intensity: game, warm black olives and dark chocolate, swirling around primary black cherry and plum fruit, with perfectly polished tannins and subtle fruit sweetness. I found last year’s disgorgement a touch horsey, but there’s no hint of it here, returning Joseph to its rightful position among the finest sparkling reds in the country.

Medium red-purple; the complex mix of berry, sweet earth and touches of leather and spice on the bouquet is followed by a similarly complex palate with berry fruit to the fore, then hints of spice and chocolate, and a nice, dry finish. Has the texture, balance and appeal which so many sparkling red wines utterly fail to produce.

The answer is we have no idea, so don’t ask any more questions. This dark chocolate-flavoured wine has all the answers – it is mind-blowing.
