It’s normally Shiraz that’s made into Sparkling red styles but in this case Peter Rumball uses Merlot from Coonawarra to create a festive bubbly. Peter is a champion winemaker who decided to specialise in sparkling reds as it was a style that he liked the most. We like what we see here with the soft florals of Merlot on the nose before delicate raspberry and blueberry fruit. It’s well balanced with an attractive soft finish. A good way to kick off a barbecue as the wine works well with grilled meats.
The softness and violet character of the merlot fruit shows through on the palate and the finish is well balanced. The palate shows raspberry and blueberry characters with a lovely soft finish. The base wine receives only minimal oak storage, to ensure the lovely floral characters are not lost. Food Match: Medium flavoured foods - Barbeque lamb, Deep fried Turkey or Duck; and soft cheeses such as White Castella or Brie.
