Here's a bubbly that is already sporting some gold 'bling' and is good value at the price. Aromas of green apples, citrus, baked bread, and a touch of red fruits decorates the nose, along with whiffs of stone fruits and dairy. The palate is light to medium-bodied and creamy, with juicy yellow citrus and peach flavours, a fine bubble, and a racy, biscuity finish that lingers. Try it with some fish tacos - yum!

Winemaker's Notes

Crystal clear light straw with a very fine persistent bead. Intense aromas of sourdough crust, candied green apple, preserved lemon and ginger lily sitting over a defined pinot noir meatiness. The palate is fresh, full and rich showing a buttered teacake like texture from the yeast autolysis but staying true to its chardonnay spectrum flavors and line.

A 74/36% blend, using the traditional method, that spent 36 months on lees prior to disgorgement. A deliciously balanced wine, with creamy yeast notes spun through the vibrant white peach/citrus fruit, the dosage spot on.
