Mudgee is situated at a chilly 450 metres above sea level on the western slopes of the Great Dividing Range. This location, with its free-draining sandy soils, is a great starting point for a whole cast of cool-climate varieties and styles. Pinot gris is an obvious candidate, and this example from Optimiste is a stunner! With a slight pinkish appearance, smells include guava, peach, musk, and wet wool, while the palate is broad and intense with just the right amount of slip courtesy of the 14 per cent alcohol it carries with relative ease. Drink it with a pork and rabbit terrine.
