Two batches picked at different baume levels, one clear juice, cool-fermented with cultured yeast, the other with cloudy juice, wild-fermented at warmer temperatures, up to 21?C; all this has resulted in good texture, with spice, ginger and pear flavours heightened by some sweetness on the finish.
