This pretty pink billy is a dry, fruity, light-bodied style that shows plums, soft spice and a touch of earthy leafiness on the nose. The palate is light and easy going, with red fruit and savoury flavours, an appealing creamy mouthfeel for added richness, and a dry, fruit-driven finish. Lovely with poached salmon.

Winemaker's Notes

Pink Billy is made from the free run juice extracted from a sample of grapes collected across our sorting table. The berries where selected on weight and colour. Merlot (mainly being the larger berry) forms 50% of the blend, while Shiraz and Cabernet Franc make up the balance equally. Pink Billy Saignee is light salmon pink in colour, with aromas of strong berry fruit characters. The flavour is creamy and soft with excellent texture married with subtle but powerful fruit characters. It is dry and savoury without being astringent, showing off a great length of flavour.

A very stylish rosé with a pretty bouquet of pomegranate, guava and strawberry hull fruit. The palate is refreshingly dry, with a fresh acid profile and excellent persistence.

With attractive pink colour and bright red fruit aromas, this ticks all the rosé boxes. The palate has candied strawberry flavour indicative of nicely judged ripeness, finishing with soft, easy texture. Serious enough without losing the broader appeal.
