Exotically complex and full of character, with a spicy, meaty bouquet of polished leather, dark fruit and animal hide. It's long, smooth and crunchy, with an evolved, leathery presence of vibrant dark plums and berries, a fine creamy bead and a wild, savoury and licorice-like finish that shows just a hint of cracking.

Medium red-purple; the complex mix of berry, sweet earth and touches of leather and spice on the bouquet is followed by a similarly complex palate with berry fruit to the fore, then hints of spice and chocolate, and a nice, dry finish. Has the texture, balance and appeal which so many sparkling red wines utterly fail to produce.

Joe Grilli; a near-insane sparkling red wine; the outskirts of Adelaide; released recently and made from a fifteen-year-old Shiraz base wine, with some Amarone-d Cabernet (dried grapes – heady and intense) and topped up with a liqueured red wine from the seventies.We missed how? The answer is we have no idea, so don’t ask any more questions. This dark chocolate-flavoured wine has all the answers – it is mind-blowing.

Check the recipe and marvel: Shiraz from every vintage since the eighties (and some from the early sixties and seventies), a hogshead of Moda Cabernet Merlot every year, liqueured with old Australian fortifieds. The result is serious complexity and intensity: game, warm black olives and dark chocolate, swirling around primary black cherry and plum fruit, with perfectly polished tannins and subtle fruit sweetness. I found last year’s disgorgement a touch horsey, but there’s no hint of it here, returning Joseph to its rightful position among the finest sparkling reds in the country.
