This consistently impressive non-vintage bubbly is from a small Central Otago company involving Rudi Bauer (ex Giesen and Rippon) and Clotilde Chauvet (ex Rippon, whose family own the Champagne house of Marc Chauvet). Based on Marlborough fruit, bottle-fermented and matured for two years on its yeast lees, it's a Pinot Noir-dominant style, with 20 per cent Chardonnay. The blend on the market in late 2000 is unusually stylish, with a richly fragrant bouquet. The palate is crisp and lively, intense, tight and complex, with good vigour and harmony and a long, dry, yeasty finish. Later releases will be based on Central Otago fruit. Great value.

The wine on the market in 1999 is a great debut from a tiny Central Otago company involving Rudi Bauer (ex Giesen and Rippon) and Clotilde Chauvet (ex Rippon, whose family own the Champagne house of Marc Chauvet). Based on Marlborough fruit, bottle-fermented and matured for two years on its yeast Ices, it's a powerfully Pinot Noir-influenced style (20 per cent Chardonnay) with a light straw hue and richly flavoured, mouthfilling palate, yeasty, crisp, complex and lingering. Later releases will be based on Central Otago fruit. Great value

Medium yellow-green; the bouquet is clean, with quite soft citrus fruit, a hint of bready yeast, and no apparent aldehydes. The wine has a welcoming mouthfeel with a mix of citrus, pear and ripe apple fruit flavours, supported by a singularly well-balanced finish.
