This increasingly Champagne-like, non-vintage bubbly is from a Central Otago company. The batches vary in varietal composition, but the latest release in 2011 is a blend of Pinot Noir (61 per cent) and Chardonnay (39 per cent), grown at Bendigo. Faintly pink, with fine, tiny bubbles, it is vivacious and smooth, tight and youthful, with crisp, yeasty, slightly nutty flavours that linger well.
