Chardonnay is on a resurgent rise and every winery wants to show the ABC defectors that modern Australian Chardonnay is not just big, blousy and oaky. Take this example from Salitage in Pemberton W.A. They have purposefully not oaked this wine so all you get is pure, unadulterated fruit.

It’s bursting with stone-fruit and peach which is underpinned by a citrus core. On the palate expect to find nutty characters and a rich texture of minerals. It ends fresh and clean with balanced acids.

Winemaker's Notes

Fruit driven, stone fruit and tropical fruit flavours. Full mouth feel with balanced acid and long flavour length.

Pink grapefruit and apricot aromatics. 

Palate shows strong fruit drive with stone-fruit (apricot) and citrus flavours, some nutty yeast lees character, a richly textured mid palate shows mineral notes and finishes crisply and cleanly. An excellent example of pure unadulterated Chardonnay fruit.

They keep interesting fruit aromas in this style. Creamy, linseed green apple with green nectarine. Quite pure in the fruity style, softly fruity and creamy with a lick of residual sugar, serve well chilled and with Thai food.

There’s a lot more to this wine than simply being called an unwooded chardonnay. In fact the name foes it a disservice. Complex minerally and spicy aromas of stone fruit with a liberal twist of lemon juice. The plate is crunchy and vibrant with a cream texture and a lively lingering acid.
