Of the Sandalford range, the Prendiville sits on the top tier offering up the most noble expression of Margaret River Cabernet Sauvignon. Sure, it’s not cheap, but you don’t go and buy a Porsche expecting to pay for a mini! From a stellar vintage this is all blackcurrant and violets on the nose with cedary complexity from expensive French oak. The palate is elegant with cassis and cedar, some cigar box and chocolate offering immense flavour. The balance is spellbinding, the finish soft and long with integrated oak and very fine tannins. You could happily cellar this for up to 15 years but we just can’t wait, nor can the lamb roast to pair it with.

WINEMAKERS COMMENTS
After crushing and de-stemming, this select parcel of hand-picked Cabernet fruit was inoculated with a selected yeast strain and fermented in small 10 tonne static fermenters. The traditional methods of rack and return and pumping over were employed during fermentation to optimise colour, flavour and tannin extraction from the fermenting must. At the end of ferment, the wine was pressed and transferred to oak barrels. After12 months of barrel maturation, only the best 10 barriques were put aside for this release of the Prendiville Cabernet Sauvignon. Each bottle is individually numbered. 12 months in 50% new French oak barriques and 50% 2 year old French oak barriques.

TASTING NOTES

COLOUR: Dark ruby red with an unmistakable cherry hue.
NOSE: Classic red and black berries, with mocha and marzipan notes from the oak.
PALATE: 2014 was another exceptional year for Cabernet in Margaret River. Intense blackberries and perfumed violets mingle with savoury spices. The French oak adds beautiful vanilla, cedar and mocha flavours. The tannins are powerful, but velvety soft and combined with the acid, builds to the back of the palate resulting in a long and lingering finish with a beautiful line. Whilst a remarkable wine now, with careful cellar maturation for 15 years or more, this limited release Prendiville Cabernet Sauvignon will certainly reward the patient. (A harmless deposit may form in the bottle during cellar maturation and decanting is recommended prior to serving).

Fabulous cabernet that captures the very essence of the style in Margaret River. There is power and persistence but the fine angular lines create a refined elegance that carries the length of a very long palate profile. Black currant cabernet with some leafy tobacco characters. Firm fine tannins and great oak treatment. Has a dusty leafy aroma with a little black olive nuance. Excellent wine with great potential.

The full bells and whistles: hand-picked from the best dry-grown blocks of estate plantings; crushed and fermented in static tanks, finishing its primary fermentation and mlf in new French oak barrels; the best 30 barrels were then chosen for this wine, replete with bottle numbers on the labels. It is pure Margaret River cabernet, blackcurrant and cassis threaded through with positive savoury tannins and oak.

Already showing some development, with a cedary, chocolatey bouquet of small black and red berries backed by earthy, smoky nuances, a hint of capsicum and the beginnings of leathery complexity. It's smooth, supple and very fine-grained, with a faintly green-edged presence of juicy, plush fruit rather dominated by assertive cedar/vanilla oak. I'd question the choice of cooperage.

It's a little unpolished and does need time in in the bottle, but it's likely to age in a typically minty style. Deep, dark aromas of plums, cassis, plain chocolate and black olives with undertones of minty, menthol and dried herbs precede a firmish, drying and astringent palate. A little raw, it delivers a pleasing length of dark, minty berry/plum fruit that will ease more comfortably into its chocolatey oak as it ages.

Mature dry grown vines in the heart of Margaret River are pumping out some great cabernet fruit. This super expressive wine takes full advantage of that. This is a substantial statement of Margaret River cabernet. Deep and concentrated fruit, firm fine tannin, fine grained oak are brilliantly harnessed into one of the best examples of Margaret River cabernet. Classic structure that will see this lasting two decades easily.

Ripe, almost heady aromas of wild berries, raspberries, cherries and plums with a dusty background of fine-grained, cedary oak precede a smooth, polished and luxuriant palate laced with intense, dark and minty fruit. Framed by firm, slightly raw tannins and tightly knit with dark chocolate/cedar oak, it is presently slightly angular and awkward, but should settle down over the longer term.

The flagship Sandalford cabernet shows bay leaf and roasting herbs, plenty of bright new oak across cool-fruit aromas, cassis, bramble and a touch of mint. The oak drives through the palate forming a stripe of berry cola flavour, ripe tannins sit soft and fine, finishing savoury and serious. Still on the ascent.

This is the top of the tree for Sandalford, introduced a few years ago. Wonderfully poised and elegant expression Cabernet from this original planting in the early seventies. Silky smooth and seamless structured with fine tannins and fragrant oak supporting the fruit. The palate has a more medium-weight but there is extraordinary depth and power sitting behind it. Great wine.
