This is matured in oak for ten months, though only about 10 per cent of that oak is new, meaning that there's very little oak flavour. It's a far cry from the mid-1990s, when everything seemed to be heavy with oak. Sweet, syrupy, toasty flavours melt effortlessly into a tarry, almost burnt aftertaste. It's a bit like drinking a grown-up version of barbecue sauce, complete with grainy texture. Drinking it is a most enjoyable exercise.
