Made from a blend of 60% chardonnay and 40% pinot noir, this is made the same way as Champagne, but at a fraction of the price. Appealing smells of green apples, dairy, stone fruits and buttered bread lift out of the glass, whilst the palate is lighter-bodied, smooth and creamy, with a cleansing line of citrusy acidity, and a dry, bright finish. Great as a party starter with some mini quiches.

Winemaker's Notes

Vineyard: Trellised vines with average age of 12 years yielded the grapes for this wine, at an average of 8 tons per hectare. The vineyards received supplementary drip irrigation.

Winemaking: Grapes from 3 selected vineyard blocks were hand-harvested between 17 and 19° Balling in 9kg crates. After hand sorting the grapes on the sorting table the grapes were whole bunch pressed. 90% of the juice was fermented in stainless steel tanks and 10% in old 400 litreFrench oak barrels. Second fermentation took place in the bottle. After second fermentation the wine spent 20 months on the lees before disgorging.

Appearance: A vibrant straw colour.

Nose: Clean nose with fresh flavours of green apple, strawberry and a biscuit backdrop.

Palate: These flavours are echoed on the smooth, creamy palate. The fresh, lively aftertaste adds to the attraction.

Food: Serve with a gourmet breakfast or separately as a celebratory aperitif.

Cellaring: Enjoy now or within 4 years of harvest.
