The 2008 vintage is a blend of Pinot Noir (53 per cent) and Chardonnay (47 per cent). The base wine was fermented and aged for a year in old oak casks, and after its secondary fermentation in the bottle, the wine matured for 18 months on its yeast lees, prior to disgorging. Crisp and bone-dry (2 grams/litre of residual sugar), lively and yeasty, it's an elegant wine with citrusy, nutty flavours, showing excellent delicacy and complexity.
