Sparkling Stef. That’s the name we have given Stefano Lubiana as he’s got a deft hand and knowledge of how to make a killer sparkling using pristine fruit from his Tasmanian outpost. This has all the benefits of six years left on yeast lees to aid complexity and depth of flavor. There’s still a freshness and liveliness about this and it will reward with further cellaring, however if drinking now all it needs is some fresh oysters.

Winemaker's Notes

The 2005 Vintage Brut is our latest release of bottle-fermented vintage sparkling wine. The wine is a 60:40 blend of Chardonnay and Pinot Noir. Tiraging took place in November 2005. The wine spent almost seven years on lees in its bottle. Disgorged October 2012. 


Appearance: Pale straw with green-gold highlights. Excellent creamy mousse with persistent fine bead.

Nose: Attractive toasty/pastry aromas with brioche and mushroom nuances.

Palate: Wonderfully smooth, regal palate; great presence, with ripe Pinot Noir influences balanced by refreshing/tangy natural acidity and our vineyard’s citrus-y Chardonnay character. Despite the absence of oak in its winemaking, the wine is round, multi-layered and well-textured. Terrific persistence of flavour. The vintage character really shines.
