Tilbrook Estate Estate Pinot Noir
This playful little pinot noir represents great value, especially when you consider it's from the Adelaide Hills! It's soft, supple and sumptuous showing spiced plums and berries on the nose. The palate is juicy and cherry-like with that spice coming through again, together with fine, lacy tannins before the dry, long finish. It's ready to drink now, or over the next 5-years.
The fruit was handpicked from the close planted “Back” block . The grapes were mostly destemmed and crushed into open top fermenters. We added 20% whole bunches to the vat, to allow some carbonic maceration complexity and to add tannin.
Fermentation with wild yeasts followed and the grapes were “on their skins” for a total of 21 days before being gently pressed in our Bucher air bag press. After pressing the wine was allowed to settle for a week before the clear wine was transferred for maturing into 1/3rd new French oak barrels for 12 months.
Glorious nose of violets, red berries, plums and spice, rich palate which is supported by a fine tannic structure. Drinking beautifully now this wine will age for up to 5 years.
