Tim Knappstein certainly knows a thing or two about making great wine. In fact, I’d go as far to say he is one of the most trustworthy labels coming out of South Australia. This is his stellar Merlot blend with a little bit of age on it that shows just how fine Merlot can improve out of sight in the bottle. Perfumed cedary blackcurrant fruit now beautifully smooth and supple finishing silky, long and delicious.

Winemaker's Notes

The Knappstein Palatine Cabernet Merlot uses the ingenious technique adapted from Italian Aamarone production of drying ripe Cabernet grapes prior to pressing to create a bid, bolder style of Adelaide Hills red. Robust dark cherry and leafy blackberry aromas lead to a rich and dense palate that remains supple finishing with grainy tannins. Now with some bottle age cedary/tobacco characters it will be at is best from 2008 to 2012.

Medium red-purple; the bouquet is clean, offering fragrant red and black berry fruit; there is a sweet array of red berry fruit, in a quite different spectrum from the '98; soft, fine tannins and subtle oak round off the finish.
