Hailing from South Eastern Australia, this blend of cab sav and merlot is just the thing for that mid-week visit to the local pizzeria. Smells of blackcurrants, leafiness and fleshy plums adorn the nose, with just a sprinkle of soft spice. The palate is medium-bodied and fruity, with some talcy mouth coating tannins, a touch of herb and toastiness, and a soft, succulent finish.

Winemaker's Notes

Very good rains were recorded across all grape growing regions throughout South Eastern Australia during the winter proceeding the 2012 growing season. Mild weather with moderate rainfall was observed throughout spring providing excellent soil moisture profiles which promoted healthy vine canopy development, without the necessity for early season supplementary irrigation. The summer months were generally warm to hot across all regions of South Eastern Australia, producing one of the very best vintages of recent years. At optimum ripeness, the fruit showed maximum intensity and vibrancy of flavour with full colour development in the skins and soft supple fruit tannins.

Appearance: Full depth red with a purple hue.

Nose: Fresh black cherry and cassis with cedar oak.

Palate: Ripe plum and mulberry with hints of tobacco and dried herbs. Toasted vanilla oak and fine grain tannins provide structure and length to this traditional blend.

Food: Red meat.

Cellaring: Enjoy now or in the mid-term.

Alcohol: 14.2%

Long, firm and minty, this forward and slightly candied cabernet blend has a vibrant aroma of Cassis and plums with herbal, lightly musky and meaty undertones with a whiff of raw-edged vanilla Oak. Lively and forward, but then a little hollow and hard-edged at the finish, it's flavour some, but unpolished and rustic.

Elegant, fine and harmonious blend with an earthy, slightly muddy aroma of small berries and cedary oak. Smooth and supple, it's restrained but brightly flavoured, with vibrant cassis/raspberry fruit and cedar/vanilla oak finishing with appealing length, tightness and balance.

This is the quintessential quaffer: good, bright, intense spicy, redcurrant, red cherry, plummy flavours, fleshy texture and ripe, sweet tannins with some power. Max wrote about its 'lovely core of soft sweetness' and when the wine's identity was revealed, remembered an earlier comment on obvious sweetness in the Bin 555 Shiraz. Most importantly, the Bin 888 is neatly balanced having sufficient rich fruit and tannin to balance any sweetness. It's flavoursome and easy to drink.
