Cava is the Spanish version of Champagne made from native varieties. They make for excellent drinking, as well as being a pleasant alternative at a fraction of the price. It's made the same way as Champagne, and this offering shows some bright aromas of custard apples and pears, with hints of dairy and toastiness on the nose. The palate is quite light with balanced sweetness, frisky appley acidity, fine bubbles, and a refreshing, more-ish finish. Serve as an aperitif, or at the end of a meal with fruit-based desserts.
The best grapes from the varieties Macabeo, Xarelo and Parellada are selected. After a thorough making and a superb coupage of the wine a second fermentation in the bottle takes place in our cellars. Time and repose have qualified its characteristic bouquet.
Appearance: Very pale yellow with slight golden gleams, good slight gassiness which ends up forming a bright corona.
Nose: Very elegant with a touch of fruit and also the typical features of ageing in the bottle.
Palate: Fresh, lively, delicately sweet, offers a well-integrated acidity with a gentle carbonic acid gas.
